White tea is a great delicacy and is considered a pinnacle in the long history of tea. Its manner of production is really rather special. The teas are usually made from just the unopened buds, gathered before they start to unfurl. Once carefully picked, they are left to wither in order for the water to evaporate and then they are dried. The buds keep their silvery white appearance - Silver Tips - giving very pale, champagne-coloured liquor that has a very light, soft, sweet, velvety flavour. Some white teas are hand-rolled to make unusual shapes. Originally, they were only made in China, mainly along the south-eastern coast of Fujian province. Multiple infusions are possible.
